MIX THE FLOUR AND WATER

The first step to making the dough is to combine three kinds of flour with water. Combine:

  • 748 grams bread flour
  • 110 grams wheat flour
  • 49 grams dark rye flour
  • 641 grams of room temperature water

The best way to mix the dough is with a well-washed hand. Dig deep into the bowl and stir with your hand until all the flour is incorporated. It may take a few minutes of mixing; be patient. Don’t leave any flour on the bottom of the bowl. The result will be a dry-ish clump of dough.

You will have dough stuck to your hand when you’re done. Just scrape it off with a rubber spatula as best as you can.
